Fast freezing. Shock freezing, carried out at temperatures below -35°C, ensures the rapid formation of small ice crystals inside the berry. This is especially important for raspberries, as a large ice crystal can damage the cellular structure, resulting in a loss of texture. Shock freezing minimizes such losses, preserving the softness and appearance of raspberries.
Humidity control. The optimal level of humidity helps to prevent dehydration of the berries, which is important for maintaining the texture and weight of the product. Industrial freezers must have a humidity control system so that the berries remain juicy after defrosting.
